MODIS AQUA SST Daytime Data

Hello Sir,
I had downloaded SST data of MODIS AQUA 11 micron daytime images in October 2019 and now in November 2020 once again I have downloaded the data. But in both the images, the SST values are different. So which image should I choose for my research work now and why?

In general, you should prefer the more recently produced data.  Products are initially generated as "quicklook" files.  These are regenerated once we have received all the ancillary data needed to produce our "refined" products.  We also reprocess our data sets from time to time as we improve the algorithms we use or as we get better calibration data for the instrument in question.
