Hourly or Daily sea surface temperature

Hello, I have emailed to your support team and He replied me. I want to download hourly (daily) sea surface temperature. He said me "Giovanni does not have the daily SST data products, partly due to the lack of coverage caused by cloud cover" and He recommended me to use the following link:

Actually I want to report the maximum temperature of sea surface in a specific area.
could you please help me? when I went to the link I could choose the area, the date and checked the MODIS-AQUA sensor. but I don't know what time it is! I'm very confused.

OK but for example I choose L2 Level and go to 31_DECEMBER_2020:

1- I see many dateset but for a specific area which one I should download?
2- my second question, what time of day is the date captured? it's important bcoz usually the maximum temperate occurs at 12:00 PM to 14:00 PM

*now I see three L2 level layers, as you see in the end of the names there are OC, IOP and SST respectively. I found a link to discuss about the Product Definitions:

(But I couldn't find a clear difference between them! I just know OC means Ocean Color and SST means Sea Surface Temperature)

the time is 2020_DEC_31 and 09:55:01
*what Time Zone is the time for? (for example 09:55:01 for UTC +3:00 or another time zone)

Thanks, George for pointing out the current naming convention. We are in the process of converting our data over to a new file naming convention. The link I posted is for the new naming convention.
OC for ocean color, SST for sea surface temperature or IOP for inherent optical properties
UTC time is used.
