SWOT Raster Data Tutorial

Hello,

I was working through this tutorial here on SWOT raster data: https://podaac.github.io/tutorials/notebooks/datasets/SWOT_Raster_Notebook_local.html#author-nicholas-tarpinian-po.daac

For some reason my raster plots using ds.wse.hvplot.quadmesh are projected at what looks to be slanted. See image attached. Any idea what is going on?
