Thanks for your message. I am somewhat surprised you didn't receive a reply before now. I think your post may have been overlooked because you did not designate a particular data center.
To get started, I would examine this site: https://lance.modaps.eosdis.nasa.gov/
The data latency for various environmental-related datasets varies between missions and data centers. For example, there is a precipitation data product called IMERG that provides "Early" and "Late" run data, with the Early available 4-6 hours after acquisition, and the "Late" ~18 hours after acquisition, with the Late Run data more accurate than the Early Run. We have this data at the GES DISC, https://disc.gsfc.nasa.gov. Some IMERG data can be accessed and visualized with our Giovanni system, https://giovanni.gsfc.nasa.gov/. The other NASA data centers have other data products and variables, with the time from acquisition dependent on what the data pertains to, and where it comes from.
