Open Education Course on Earth Observation Data

I need to develop undergraduate course on Earth Observation Data. Could anybody recommend an open education resource (OER) course that I could adapt or maybe a textbook. Would be greatly appreciated. These are anticipated learning objectives:
•     Demonstrate understanding of the main global earth data portal(s) and its structure;
•     Demonstrate the ability to navigate and download data;
•     Demonstrate ability to link global earth data and the context in which they can be applied (e.g. natural hazards, food security, etc.);
•     Demonstrate understanding of earth data analytical tools and methods they use;

Another potential resource is the Center for Education, Engagement, and Evaluation at the University of Colorado: https://ceee.colorado.edu/educators. CEEE provides a resource library that includes lesson plans.
